Falafill is a quickly growing fast casual restaurant concept in Chicago, founded by award winning chef, Maher Chebaro. With a distinct focus on providing beautiful and delicious food, Falafill serves Mediterranean sandwiches and mezza platters.

About the Guest Chef Series

Every month, Falafill collaborates with a culinary leader to create a unique falafel wrap recipe to be featured for an entire month at Falafill restaurant locations. Proceeds from every wrap sold are donated to charity.

The series is wildly popular in Chicago with many of the area’s celebrity chefs contributing recipes such as chef Iliana Regan of Elizabeth Restaurant (which received its first Michelin star in 2013) and chef Ashlee Aubin (formerly of Alinea and currently at acclaimed Wood restaurant)

How to Get Involved

For 2014, the Falafill guest chef series is seeking chefs outside of Chicago to create unique falafel wraps. Falafill will donate proceeds from every guest chef wrap sold to Mediterranean Feast Fundraiser for Paula Wolfert and the Alzheimer’s Association. 

What Do Guest Chefs Have to Do? 

1. Create a falafel wrap recipe

2. Submit the recipe to alina@eatfalafill.com and mediterraneanfeast@gmail.com along with a bio and a photo

3. Receive a pantry basket of Eastern Mediterranean specialty products from Ziyad Brothers

4. Have fun while supporting a great cookbook author and a great cause

About Paula Wolfert

PAULA WOLFERT, a resident of Sonoma, is the author of eight previously published cookbooks, all considered classics. Among them: Couscous and Other Good Food From MoroccoThe Cooking of Southwest France, and five books on Mediterranean cuisine including the much praised Cooking of the Eastern Mediterranean. She has won the Julia Child Award three times, The James Beard Award five times, The M. F. K. Fisher AwardThe Tastemaker Award and been a finalist for the British Andre Simon Award. She is the creator of the open Facebook Moroccan Cooking Group.

The late New York Times food writer Craig Claiborne has written of her: “I think she’s one of the finest and most influential cookbook authors in this country. Her recipes are done with incredible accuracy. She brings a sense of wonder to matters of taste. She has an uncommonly fine palate. In sum, she is one of the leading lights in contemporary gastronomy.”

Mediterranean Feast Fundraiser for Paula

Renowned and beloved cookbook author, Paula Wolfert, was recently diagnosed with Alzheimer’s disease. In true fighting spirit, Paula has become a leading spokesperson for Alzheimer’s; championing preventative measures and ways to mitigate symptoms of the disease.

Mediterranean Feast for Paula is a grassroots fundraising and outreach campaign organized by chefs Farid Zadi and Susan Park with the support of Paula Wolfert and the Alzheimer’s Association. All proceeds go to the Alzheimer’s Association.

The Event: April 27th, 2014, Noon-4:00 pm

at Sarkis Vartanian’s The  Daily Dose  

1820 Industrial St #104, Los Angeles, CA 90021 (Directions)

General admission, $75: Sample over 30 dishes inspired by recipes from Paula Wolfert’s many cookbooks spanning the entire Mediterranean Basin from couscous to cassoulet and everything in between. Does not include drinks. Food will be available at stations and as passed apps.

VIP admission: $125: includes free valet parking, goodie bag with spices and ancient grains, complimentary drink, and sit down service with waitstaff.

-Whole lamb roast

-Rabbit with preserved pears and ginger

-Duck with green olives and herbes de Provence

-Berber couscous with 7 vegetables

-Pan roasted cauliflower with pine nuts and raisins

-Sauteed Kale with garlicky white beans
